Fletch’s Fish Taco Sauce

Fletch, one of my co-workers, gave me this recipe.   It’s a great enhancement to the Simple Way To Cook Fish.  You can make the sauce ahead of time and let it sit in the fridge overnight (you need to let it sit at least an hour, but better overnight), then make the fish, and warm up some tortillas and you are in business.  I like to also add some diced tomatoes and avocado.  Enjoy!

Fletch’s Fish Taco Sauce:

1/2 cup of Greek plain yogurt

1/2 cup mayo

juice of one half lime

1/2 tsp cumin

1/2 tsp ground coriander

1/2 tsp dried dill

1/2 tsp oregano

1/4 tsp chipotle chile powder

1/2 tsp minced capers

1 chopped chile, seeded and ribs removed  (I recommend jalapeno or serrano)

1 Tbsp fresh chopped cilantro

Whisk yogurt and mayo until blended

Add juice from lime, whisk in

* You are looking for a consistency similar to 1000 Island dressing.  If too thick, add more lime.  Not thick enough, add more yogurt/mayo.

Add all spices and whisk thoroughly

Add capers, chile, and cilantro and incorporate into the mixture.

Cover and refrigerate for at least an hour.
