Recipe: Humboldt Squid Mediterranean Style

I like this recipe for a couple of reasons…A) it’s fast – you don’t have to pound out the squid and it cooks up very quickly (1-2 min once the squid hits the hot oil); and B) it tastes great!  I love going the breaded and fried route as much as the next guy, but this is lighter and still delicious.  Give it a go.

Ingredients (serves 2)

1 squid steak

4 cloves of garlic

1 roma tomato

2 tablespoons chopped Italian parsley

1/4 stick of butterIMG_0048

2 cups pasta

olive oil, salt and pepper

Directions

IMG_00491) Boil the pasta until al dente.  Rinse in cold water.  Set aside.

2) Peel the membrane from the squid steak and cut it into strips…roughly 2″ long by 1/2″ thick.

3) Chop the parsley.  Chop the garlic.  Dice the tomato

4) Heat olive oil in the pan on high heat (6 on a scale of 1-10).  Just before it starts to smoke, add the squid.  Salt and pepper.  As the edges start to turn white, add the butter and garlic.  Add the pasta.  Give it a turn and add the parsley, tomato, and squeeze the lemon into it.  Give it a couple turns to incorporate all the ingredients.  Plate and top with fresh grated parmesan (optional).  Enjoy!
